This simple and healthy raw tikki chaat takes 20 minutes to prepare once you have all the ingredients in hand.
RAW TIKKI
Ingredients - any proportion will work
Broccoli
Sprouts - I have used Moong sprouts. You may substitute with any other sprouts too.
Onion
Green chillies
Coriander leaves
Salt
Lotus seed powder for binding Boiled potato (optional for binding)
Pulse all of the above in a food processor. Add in the lotus seed powder and gently fold in. If required, add a boiled potato as a binding agent. Flatten them into tikkis and arrange on the plate.
VEGAN YOGHURT
Ingredients
Cashew nuts - 8-10 pieces
Sunflower seeds - 1 tbsp
Pumpkin Seeds - 1 tbsp
Salt and Water
Lime juice to taste
Soak the nuts and seeds together for about 4 hours in water. Grind them to a fine paste with salt, water and lime juice.
GREEN CHUTNEY
Ingredients
Coriander leaves - 3 bunches
Onion - 1 small
Cashew nuts - 5 pieces
Lemon juice - from 2 lemons
Black salt - to taste
Cumin - 1 tsp
Garlic - 2
Water
Blend all of them together to a fine paste.
Lastly, just before serving, arrange the tikkis on a plate. Drizzle the vegan yoghurt and green chutney over the tikkis, followed by some seeds and raisins. Garnish with chopped red capsicum.
