KEFIR AND KOMBUCHA BREWING
KEFIR
Water Kefir is a wonderful mildly zesty, fermented beverage. It is a natural, light and refreshing soda - perfect for a healthy drink alternative. It has a low glycemic load and no caffeine either. It is fermented at room temperature in a sugary water with lemon and dried fruit for about 24-48 hours. It has many wonderful health benefits and is also a great option for those sensitive to milk.

Folic acid (and B vitamins) increases as the length of the ferment increases. Some people let the strained kefir sit on the counter or the fridge another day to increase the folic acid and B vitamin content before drinking (this will increase the acidity too).

KOMBUCHA
Kombucha is a fermented tea, made by brewing tea together with sugar, and then letting the mother (also known as the SCOBY, which stands for symbiotic colony of bacteria and yeast, or mushroom) do the work of turning that sweet liquid into a fizzy, carbonated drink. The result is a fermented drink full of plenty of things that are good for you.

This is a 2 hour workshop with detailed presentation on Kefir and Kombucha followed by hands-on brewing session. Remember to bring along 2 small glass containers to take home your kefir grains and Kombucha scoby.
